How to make Salmon with Mushroom Sauce

Ingredients:
- 4 salmon fillets
- Salt and pepper
- 2 tbsp olive oil
- 2 tbsp butter
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tbsp of mushroom powder
- 1/2 cup white wine
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tbsp Dijon mustard
- 2 tbsp chopped fresh parsley
Instructions:
- Season the salmon fillets with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the salmon fillets from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the shallot and garlic and sauté for 2-3 minutes, or until softened.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes, or until tender and browned.
- Pour in the white wine and chicken broth and bring to a simmer. Cook for 5-7 minutes, or until the sauce has reduced by half.
- Sprinkle the mushroom powder, stir in the heavy cream and Dijon mustard and cook for an additional 2-3 minutes, or until the sauce has thickened.
- Return the salmon fillets to the skillet and spoon the mushroom sauce over the top.
- Sprinkle with chopped fresh parsley and serve immediately.
