Ingredients:

  • 4 salmon fillets
  • Salt and pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tbsp of mushroom powder
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard
  • 2 tbsp chopped fresh parsley

Instructions:

  1. Season the salmon fillets with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the salmon fillets from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the shallot and garlic and sauté for 2-3 minutes, or until softened.
  4. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, or until tender and browned.
  5. Pour in the white wine and chicken broth and bring to a simmer. Cook for 5-7 minutes, or until the sauce has reduced by half.
  6. Sprinkle the mushroom powder, stir in the heavy cream and Dijon mustard and cook for an additional 2-3 minutes, or until the sauce has thickened.
  7. Return the salmon fillets to the skillet and spoon the mushroom sauce over the top.
  8. Sprinkle with chopped fresh parsley and serve immediately.
